CDHSCareers Description of Job About the Nutrition Services department: The purpose of the Nutrition Services Department is to provide quality food service and medical nutrition therapy to more than 1500 clients in a mental health care facility and the Colorado Department of Corrections.
With over 100 employees, the department strives, within available resources, to provide adequate nutrition to clients based on medical, spiritual, ethnic, cultural, and mental health needs.
The incumbent in this position will assist the Nutrition Services Director with planning, directing, and implementing day-to-day operations of the Nutrition Services Department.
This includes but is not limited to coordinating and directing personnel and activities such as Industrial Therapy Jobs for patients; implementation of policies and procedures; enhancing quality and cost control; assisting with the development of staffing patterns; and promoting guidelines and processes to accomplish work in order to achieve goals and objectives of the Nutrition Services Department.
This position provides the management of a complex centralized production kitchen, inclusive of a Bakeshop, utilizing both cook-chill and conventional food production systems, to feed patients cafeteria-style in six dining rooms, plus delivery to 3 Colorado Department of Corrections (CDOC) prisons on campus.
The position also supervises a program assistant I and Food Safety and Quality Specialist (Health Professional III).
The position has delegated appointing authority Primary Duties: Facilitates and directs operations of the food service department using knowledge of food service systems management and department protocols.
Determines processes for the purchasing, handling, storage, preparation and service of food to enhance quality and cost control and collaborates with the Director for implementation.
Assists with developing staffing patterns for each kitchen.
Develops specifications for procurement of food, equipment and supplies.
Establishes and maintains standards of food preparation and service, sanitation, safety and security.
Inspects food preparation and service areas, equipment, and storage facilities, and observes the appearance and personal habits of food service staff to ensure conformance to sanitation standards, state and federal regulations.
Employs preparation methods that maximize product yield, nutrient retention and product quality, producing quantities sufficient to meet demand while minimizing leftovers and according to meal service schedules.
Assists in developing job descriptions and levels of competency necessary to meet job requirements.
Manages resources to maximize efficiency and effectiveness, recognizes and leverages employee skills and abilities.
Recruits, interviews, and hires food service staff in accordance with delegated authority and established procedures.
Manages, disciplines and evaluates the performance of food service staff based on job requirements and core requirements assigned to the job.
Directs personnel management for the service by making decisions on all personnel actions including selections, promotions, reassignments, retention, and recommendations for adverse actions.
Reviews cases, documents, and takes disciplinary action for employees with poor performance records and those involved in service disciplinary actions.
Provides mentoring for the professional growth and development of staff.

Completes second level signature of performance planning and appraisals (PMPs).
Conducts regular staff meetings to inform staff of upcoming training, events, policy changes, concerns and comments.
Monitors employees’ time and collaborates with the Nutrition Services staffing office to schedule unit personnel as needed.
Works with Vocational Rehab Director to coordinate industrial therapy jobs for patients.
Organizes multiple tasks, establishes priorities, and meets deadlines for assignments and responsibilities.
Cooperatively and effectively works with people from all organizational levels and builds consensus through negotiation and diplomacy.
Reviews policies and procedures, and provides recommendations for changes to the Director and assists in achieving compliance with Hazard Analysis and Critical Control Point (HACCP), Standards of Practice (SOPs), CDHS, CMHHIP and Departmental policies.
Identifies, reviews, and prioritizes opportunities to improve efficiency and effectiveness of food service systems.
Provides input for the orientation, in-service training, and continuing education for the department.
Assists in achieving compliance with regulatory agency standards set forth by state and federal standards: Colorado Department of Public Health and Environment (CDPHE), Equal Employment Opportunity Commission (EEOC) standards; United States Department of Agriculture (USDA) Regulations; US Department of Labor/ Fair Labor Standards Act (FLSA) regulations; Center of Medicaid/Medicare Services (CMS); Health Insurance Portability and Accountability Act (HIPAA) and the Joint Commission standards.
Manages assigned teams in the implementation of project quality/improvement plans or strategies to support the departmental goals and objectives.
Assists in developing and monitoring the operating budget of over $4 million dollars for the department.
In collaboration with the Nutrition Services Director, identifies and implements cost reduction and productivity measures using quality improvement and benchmarket data.
Other duties as assigned Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights Experience and Education Qualifications: Four (4) years of Nutrition services experience or experience in an occupational field related to the work.
And Bachelor's degree from an accredited institution in a field of study related to the work assignment.
Substitutions Additional appropriate experience will substitute for the degree requirement on a year-for-year basis.
Additional appropriate education will substitute for the required experience on a year-for-year basis.
Special Qualifications: Must possess and maintain registered dietitian nutritionist (RDN) or Certified Dietary Manager (CDM) credential.
Per CDPHE regulation (6 CCR 1010-2) must be certified as a food protection manager from an accredited program; registered dietitian (RD) or Certified Dietary Manager (CDM) - OR must obtain certification within 6 months of hire and must maintain certification.
**Employment history is calculated on a full-time basis (40/hrs per week).
Part-time employment is calculated on a pro-rated basis to determine qualifications.
